چکیده
An investigation was carried out with nine green leafy vegetables (GLV’s) with their popular varieties most commonly grown in India to determine their biochemical composition. Among leafy vegetables ascorbic acid was found maximum in Chenopod cultivar Bathua Local (60.6 mg/100 g fw.) followed by Pusa Bathua -1 (23.0 mg/100g fw.) and spinach cultivar PS-1 (51 mg/100 g fw.). Significantly high level of total carotenoids was recorded in amaranth cultivar Pusa Lal Chaulai (69.4 mg/100 g fw.) & Pusa Kiran (59.0 mg/100g fw.), however Basella cultivar Local Red and Local Green recorded low value of total carotenoids (10.2 mg/100 g). High value of CUPRAC was recorded in chenopod cultivar Bathua Local (32.7 μ moltrolax/g) and Pusa Bathua-1 (23.0 μ moltrolax/g), while FRAP was maximum in Swiss Chard Local (4.2 μ mol ascorbic acid/ g f.w). Poly phenols content of GLV’s ranged from 1134 μg gallic acid equivalent (GAE)/ g of amaranth cultivar Pusa LalChaulai to 154 μg GAE/ g in case of palak cultivar Pusa Bharati. On overall basis the antioxidant capacity of leafy vegetables were in order of amaranth > chenopod > spinach > palak > fenugreek > sarson sag.

Carotenoid content and in vitro bioaccessibility of lutein in some leafy vegetables popular in Sri Lanka.
Lutein is one of the major carotenoids in green leafy vegetables (GLVs), which show a marked antioxidant activity. The study was carried out to identify and quantify the carotenoid content of selected Sri Lankan GLVs. RP-HPLC with photodiode array detection method was followed for the separation, identification and quantification of carotenoids. Among the vegetables analyzed, Ipomoea batatas le...

Green leafy vegetables (spinach and bathua) and pulses (green pea and bengal gram) are widely consumed and hold an important place in the diet of people of India. Vegetarians who consume a greater amount of vegetables will have a higher intake of oxalate, which may reduce calcium availability. The objectives of this present research were to investigate the effect of different domestic cooking a...

Antioxidant rich green leafy vegetables including garden spinach leaf, water spinach leaf, Indian spinach leaf, and green leaved amaranth were selected to evaluate the effects of water boiling and oil frying on their total phenolic content (TPC), total flavonoid content (TFC), reducing power (RP), and antioxidant capacity. The results revealed that there was a significant increase in TPC, TFC, ...
متن کاملAntioxidant properties and inhibitory effect of ethanolic extract of Struchium sparganophora (Ewuro Odo) leaf on α--amylase and α--glucosidase activities.
Recent studies have shown that vegetables consumption could lower the risk of diabetes mellitus. Therefore, this study sought to investigate the inhibitory effect of Struchium sparganophora (Ewuro Odo) leaf on key enzyme linked to type-2 diabetes (α-amylase and α-glucosidase) as well as assessing the effect of blanching (a commonly practiced food processing technique) of this leafy vegetable on...
